Chelchele is located in the Gedeb woreda, in the heart of the Gedeo Zone, within the Southern Nations, Nationalities and Peoples' Region (SNNPR) of Ethiopia. This region is renowned for the exceptional quality of its coffees, made possible by ideal altitude, fertile soils, and particularly favorable climatic conditions. In Chelchele, coffee cultivation is central to local life. The majority of families depend on it as their primary source of income. The harvest is carried out manually to select only perfectly ripe cherries, and the coffees are then processed using traditional methods, including sun-drying. The expertise passed down through generations and the community's commitment to quality have made Chelchele a leading origin for specialty coffee. Here, coffee is both a means of subsistence and a true cultural heritage. At the processing facility, rigorous quality controls ensure adherence to specialty coffee standards. The company adopts a vertically integrated approach with local producers, offering financing solutions, subcontracting and premium pricing to support sustainable production. An anaerobic fermentation process is also implemented: ripe cherries are placed in an airtight environment and fermented for 10 days at a temperature between 15 and 18 °C, allowing the development of complex aromatic profiles.
