White tea owes its name to the silky white down that covers the young buds and is fermented to only about two percent. This fermentation occurs naturally during the withering process. The highest quality variety, "Yin Zhen" (Silver Needle), is one of the most sought-after and, consequently, most expensive white teas. Only the youngest and most aromatic shoots of the large white tea plant are picked for its harvest. This takes place only two or three days a year, when the weather conditions are optimal. There must be no rain or wind, as this would damage this delicate tea. A few weeks later, once the jasmine blossoms are ready, they are carefully infused into the tea by hand to flavor it. A few days later, they are meticulously hand-sorted, leaving behind a wonderful floral fragrance of jasmine.

White teas should be brewed in water at a temperature of 80 to 85°C (let the water stand for about a minute after boiling in the kettle). The optimal brewing time for this type of tea is 3 to 4 minutes.
