Ceylon tea refers to a variety cultivated in Sri Lanka, formerly known as Ceylon. Ceylon teas are rich and relatively unaffected by hard water. They are highly prized in English blends and are typically enjoyed with a splash of milk.
The three main tea-producing regions in Sri Lanka are Uva, Dimbula, and Nuwara Eliya. The finest tea comes from the steep slopes at an altitude of 1,200 meters, where there is ample humidity and rainfall, as well as well-drained soil in which the plants thrive. To prepare English Breakfast tea, the water should be brewed at a temperature of 95 to 98°C (let the water stand in the kettle for a few moments after boiling and wait until it stops boiling). The optimal brewing time for this type of tea is 2 to 3 minutes.
