Only fresh buds and new shoots are carefully hand-picked in spring for this “White Downy” white tea from Fujian province. Gentle processing is a prerequisite for this premium grade. The fine white down is preserved almost unchanged throughout its journey from the bush to the cup. This exclusive rarity is refined by the addition of the natural aroma of juicy peaches.

Good to know...

White teas should be brewed with water at a temperature of 80-85°C (leave the water in the kettle for about a minute after it has stopped boiling). For a perfect cup, steep for 3-4 minutes.

1. Grinding into Grains

  • Description : Whole bean coffee is simply unground coffee. It is sold as whole beans and should be ground just before use to ensure freshness and flavor retention.
  • Usage : Suitable for all preparation methods, but requires a coffee grinder to achieve the desired grind.

2. Espresso grind

  • Description : The espresso grind is fine, almost like powdered sugar. This fineness allows for a fast and intense extraction under high pressure.
  • Usage : Specifically for espresso machines. The high pressure of these machines requires a fine grind for optimal extraction in 25 to 30 seconds.

3. Italian Grind (or Fine Grind)

  • Description : The Italian grind is slightly coarser than the espresso grind. It is still fine, but with a slightly more granular texture.
  • Use : Used for Italian coffee makers (Moka). These coffee makers use pressure but not as much as espresso machines, hence a slightly less fine grind.

4. Grinding Filter

  • Description : Filter grind is medium consistency, similar to granulated sugar. It allows for a slower extraction than espresso.
  • Use : Suitable for filter coffee makers, such as drip machines or manual filters (V60, Chemex type). The particle size allows for a slow infusion that extracts aromas without bitterness.

5. Piston Grind (or Coarse Grind)

  • Description : The piston grind is coarse, with clearly visible coffee particles and a texture similar to coarse salt.
  • Use : Used for French Press coffee makers. The coarse grind prevents particles from passing through the coffee maker's metal filter, allowing for a long infusion that develops aromas without creating sediment.

Tips for Grinding

  • Coffee grinder : Investing in a good coffee grinder, preferably one with burrs, allows you to obtain a uniform grind and easily adjust the particle size depending on the preparation method.
  • Freshness : Grind the coffee just before preparing it to preserve all its freshness and aromas.

White Peach Sirocco White Tea

Description

Le thé blanc doit son nom au duvet blanc et soyeux qui recouvre les jeunes bourgeons et n'est fermenté qu'à environ deux pour cent. Cette fermentation se produit naturellement lors du flétrissage. La variété de la plus haute qualité, « Yin Zhen » (Aiguille d'Argent), est l'un des thés blancs les plus recherchés et, par conséquent, les plus chers. Seules les pousses les plus jeunes et les plus aromatiques du grand théier blanc sont cueillies pour sa récolte. Celle-ci a lieu seulement deux ou trois jours par an, lorsque les conditions météorologiques sont optimales. Il ne doit faire ni pluie ni vent, car cela endommagerait ce thé délicat. Quelques semaines plus tard, une fois les fleurs de jasmin disponibles, elles sont soigneusement incorporées au thé à la main pour l'aromatiser. Quelques jours plus tard, elles sont triées minutieusement à la main, laissant derrière elles un merveilleux parfum floral de jasmin.

Bon à savoir

Les thés blancs doivent être infusés à une température d'eau de 80 à 85 °C (laisser reposer l'eau environ une minute après l'ébullition dans la bouilloire). Le temps d'infusion optimal pour ce type de thé est de 3 à 4 minutes.
