Our fine green tea originates from Shizuoka Prefecture on the island of Honshū. The region is renowned as the center of the Japanese tea trade. The special quality of the soil combined with unusual conditions distinguishes the region and ensures flourishing crops. The result is a mild yet highly aromatic tea with a light, delicate sweetness.
Sencha is a green tea characterized by a distinctive and fresh flavor. It has leaves of very uniform shape and emerald color. A typical characteristic of Japanese green teas is that they are pre-dried with hot air before being treated with hot steam, usually pronounced, to interrupt the fermentation process.
More than three-quarters of the tea grown in Japanese tea gardens is of the sencha variety. Most regions produce a number of different types, each named for the way it is processed. A variety of growing methods are used for green tea in Japan. Sencha is grown in open fields ("roten-en" in Japanese) exposed to full sunlight. This distinguishes it from other varieties, such as Gyokuro, which are grown in reduced sunlight (on "oishita-en").

Green teas should be brewed with water at a temperature of 80-85°C (leave the water in the kettle for about a minute after it stops boiling). For a perfect cup, steep for 2-3 minutes.
